Easy + Healthy One Dish Meal

I made up this easy, healthy and delish one-dish meal a few years ago and it’s always so satisfying! It only takes 10-15 min to make and all the ingredients can be found at Trader Joe’s. If you do carb-cycling like I do on the FASTer Way to Fat Loss, this is a great “low-carb day” meal…simply use the Cauliflower Gnocchi!

Easy + Healthy 10 minute One Dish Meal

Ingredients ::

One package chicken sausage {any flavor you prefer},sliced.

One bag frozen gnocchi. The flavor of the Trader Joe’s Sweet Potato Gnocchi is so good, but I use the Cauliflower on low-carb days.

Half bag fresh baby spinach.

Sun dried tomatos in a jar.

Crumbled feta cheese.

Optional :: Pesto or Chipotle Ranch dressing for drizzle.

Directions ::

Add oil of choice to pan and cook gnocchi. Add sliced sausage and continue to cook until warmed. Add a few sundried tomatoes {avoiding too much oil}. Add 1/2 bag spinach and stir until cooked. Sprinkle with feta cheese and stir until melted. Optional to add in some pesto or marinara to pan. I like to drizzle, once plated, with Hidden Valley Chipotle Ranch, which I buy at Publix!
